French Bread 1/4c.warm water 2TBS.yeast 1tsp.sugar Combine, cover and let rest till bubbly. Then add to: 2lbs.flour(approximate) salt(optional) water Mix to nice elastic texture, slightly sticky. Let rise about 4 hours in the bowl, covered and draft free. Beat down as necessary. Turn out on surface, divide and shape loaves. Let rise on baking sheet till doubled. Cook in preheated 425 degree oven for about 20 minutes. Bread should be a nice color and semi hollow sound when tapped. |
